02 - Eggs as required by cake mix
03 - Oil as required by cake mix
04 - Water as required by cake mix

→ Frosting

05 - 1/2 cup unsalted butter, softened
06 - 1 1/2 cups powdered sugar
07 - 2 tablespoons milk
08 - 1 teaspoon vanilla extract

→ Coating

09 - 12 ounces white candy melts or white chocolate
10 - Blue gel food coloring, oil-based
11 - 2 tablespoons coconut oil or vegetable shortening

→ Decoration

12 - 1 tablespoon cocoa powder
13 - 1 to 2 teaspoons vodka or clear extract
14 - Edible gold or silver luster dust

→ Assembly

15 - 24 lollipop sticks
16 - Styrofoam block or cake pop stand

# Directions:

01 - Preheat oven and bake the vanilla cake according to package or recipe instructions. Allow the cake to cool completely before proceeding.
02 - In a medium bowl, cream the softened butter, then gradually beat in powdered sugar, milk, and vanilla extract until the mixture reaches a smooth consistency.
03 - Crumble the cooled cake into fine crumbs in a large bowl. Add frosting in small increments, mixing with your hands until the mixture holds together but remains slightly manageable. You may not need all the frosting.
04 - Roll the mixture into 24 equal balls, approximately 1 tablespoon each. Place on a parchment-lined baking sheet and freeze for 15 minutes to firm up.
05 - Melt the white candy melts or white chocolate in a heatproof bowl over simmering water or in the microwave in 20-second intervals, stirring until smooth. Tint with blue gel food coloring to achieve a robin's egg blue shade. Add coconut oil or shortening to achieve desired consistency if needed.
06 - Dip the tip of each lollipop stick into the melted coating, then insert it halfway into each cake ball. Repeat for all balls, then refrigerate for 10 minutes to secure.
07 - Fully dip each cake pop into the blue coating, allowing excess to drip off. Stand upright in a Styrofoam block or cake pop stand to set.
08 - Mix cocoa powder with vodka or extract to form a thin paste. Dip a clean brush in the mixture and flick it gently over the cake pops to create speckles. Optionally, add luster dust for additional shine.
09 - Allow cake pops to set completely at room temperature before serving.

# Expert Tips:

01 -
  • Perfectly portioned bite-sized treats that are easier to serve than traditional cake

  • Versatile recipe that can be customized with different flavors and colors
  • Great make-ahead dessert that stays fresh for days
  • Fun project for baking with kids or entertaining guests
02 -
  • Use oil-based food coloring to prevent chocolate from seizing—water-based coloring will cause white chocolate to clump
  • Store cake pops at room temperature for up to 3 days or refrigerate for up to a week in an airtight container
  • Try lemon or almond extract in the frosting for a flavor twist that elevates the vanilla base
  • For the most realistic speckles, practice your flicking technique on parchment paper first
  • Chill your finished pops briefly before speckling to ensure the base coating is fully set
  • Work in small batches when dipping to keep the coating at the ideal temperature
